Tender chocolate cake recipe (8 people)

This is an Italian recipe passed on to me by my aunt. I hope you like it! 

DISCLAIMER: This is not a recipe suitable for vegans or people with allergies to cow milk and/or eggs! 

General information:
Preparation: 20 minutes
Cooking: 25-30 minutes

Ingredients:
100g of butter
3 big spoons of milk
150g of sugar
200g of dark chocolate
A pinch of salt
60g of flour
3 eggs



STEP 1

Cut the chocolate in small pieces and melt it using a bain-marie.
STEP 2

Cut the butter in pieces and add them one by one in the melted chocolate (still on the stove) and make sure it’s well mixed in the chocolate before adding more.
STEP 3

When you’re done, take the pan off the fire and let it rest until it’s lukewarm.
STEP 4

Meanwhile, break the eggs separating the yolk and the white. Put the egg yolk in a bowl and mix it with 75g of sugar - don’t throw away the egg white!
STEP 5

Slowly add the chocolate-butter mixture to the egg yolk and the sugar.
STEP 6

Add the milk (lukewarm) and the flour to the mixture of chocolate and egg yolk, and make sure to mix it well to get a homogeneous texture.
STEP 7

In another bowl, put in the egg whites with a pinch of salt and 75g of sugar and mix them until you get a compact white cream.
STEP 8

Afterwards, mix the compact cream with all the other ingredients.
STEP 9

Put the whole mixture in a cake mold of +/- 24cm diameter.
STEP 10

Put it in the pre-heated oven at 180° during 25-30 minutes.
STEP 11

Let it rest and once it’s cold, put it on a tray.
